It’s fall! Looks like I just woke up and the leaves are starting to get colored. In fact, to tell you the truth, I have been in major renovations for several weeks because we renovated the kitchen. Yes Yes! I can’t wait to give you a look of the makeover
To help with fill the large counter, I have received as a gift from Vitamix, the most beautiful mixer efficient and practical. So I wanted to use it right away to prepare full of smoothies, but finally, I have chosen a delicious soup velvety and comforting, perfect for the cool weather and especially in the same colors as the autumn. With the abundance of vegetables, I suggest you double the recipe and freeze pots for this winter. You’ll have nice nutritious soup for cold weather.
And my discovery with this soup, my daughter adores it. I’m so happy that my daughter eats vegetables without a moan.
- 2 red peppers, cut in 4
- 1 yellow pepper, cut into 4
- 4 peeled carrots, cut into large pieces
- 1 onion, cut in 4
- 2 chopped green onions
- 6 cups (1.5L) chicken broth
- Place the pepper pieces on a baking sheet. Place the baking sheet on the highest grill and cook the peppers to broil for 6 to 7 minutes until the skin is completely black.
- Place the peppers immediately in a bowl of cold water. Remove them from the water and remove the peel using your hands or a small knife.
- In a large cauldron, place all the ingredients. Bring to a boil and reduce the fire to half-high. Simmer 30 minutes.
- Place the mixture in the Vitamix and blend at low speed to begin and gradually increase to a smooth consistency.
I like of my new Vitamix because it is simple to use and it is easy to wash. I will use it for other recipes for sure!
